<연구 Ⅰ> 사료 영양 설계 수준이 단기 비육 거세한우의 성장, 도체 특성 및 수익성에 미치는 영향
본 연구는 배합사료의 영양 수준이 24개월 사육 거세한우의 성장, 도체 특성 및 수익성에 미치는 영향을 조사하기 위해 생후 7개월령의 한우 송아지 157두를 공시하여 거세를 실시하고, 사료 및 환경에 대한 적응 기간을 거친 후 생후 8개월령부터 24개월령까지 사양시험을 수행하였다.
배합사료의 영양 수준 상향은 생후 월령별 체중에는 통계적으로 유의미한 영향을 미치지 않았다. 육성기(8–12개월령), 비육전기(13–18개월령) 및 전 기간(8–24개월령) 일당증체량의 영양 수준 그룹 간 통계적으로 유의미한 차이는 없었지만, 비육후기(19–24개월령) 일당증체량은 대조구에 비해 처리구에서 높았다(p < 0.05). 영양 수준 그룹 간 배합사료 및 조사료 섭취량의 유의미한 차이는 없었으며, 건물 섭취량과 사료요구율의 영양 수준 그룹 간 통계적으로 유의미한 차이도 없었다.
생후 18 및 24개월령의 혈장 glucose 농도는 대조구에 비해 처리구에서 낮았지만(p < 0.05), 생후 12 및 18개월령의 혈장 NEFA 농도는 대조구에 비해 처리구에서 높았다(p < 0.01). 생후 12개월령의 혈장 BUN 농도, 24개월령의 혈장 creatinine 농도, 생후 18개월령의 혈장 phosphorus 농도, 생후 24개월령의 혈장 AST 농도 및 18개월령의 혈장 GGT 농도는 대조구에 비해 처리구에서 낮았다(p < 0.05). 모든 생후 월령에서 혈장 total protein 및 albumin 농도의 영양 수준 그룹 간 통계적으로 유의미한 차이는 없었으며, 대부분의 생후 월령에서 혈장 cholesterol, calcium 및 magnesium 농도 역시 영양 수준 그룹 간 통계적으로 유의미한 차이는 없었다.
모든 생후 월령에서 혈장 insulin, growth hormone 및 leptin 농도의 영양 수준 그룹 간 통계적으로 유의미한 차이는 없었지만, 생후 8개월령의 혈장 growth hormone 농도는 대조구에 비해 처리구에서 높은 경향을 보였으나 통계적으로 유의미한 차이는 아니었다.
도체중, 등심단면적, 등지방두께, 육량지수 및 육량등급 출현율에 대한 영양 수준의 통계적으로 유의미한 영향은 없었고, 근내지방도는 대조구에 비해 처리구에서 높은 경향을 보였지만, 통계적으로 유의미한 차이는 아니었다. 육색, 지방색 및 조직감에 대한 영양 수준의 영향은 없었지만, 성숙도는 대조구에 비해 처리구에서 높았으며(p < 0.05), 육질 1+등급 이상 출현율은 대조구에 비해 처리구에서 높았다.
수익성 분석에서 비육전업, 일관사육 전문 및 사육 형태를 고려한 일관사육 농가 조건 모두에서 조수입의 영양 수준 그룹 간 통계적으로 유의미한 차이는 없었다. 사료비는 대조구에 비해 처리구에서 약간 높은 경향을 보였지만, 통계적으로 유의미한 차이는 없었으며, 영양 수준에 관계없이 수익은 모두 적자를 나타냈고 손실액의 차이도 통계적으로 유의미하지 않았다.
따라서 본 연구의 결과에서 배합사료의 영양 수준 상향은 단기 비육(24개월 사육) 거세한우의 성장과 육량 형질에 미치는 영향이 전반적으로 제한적이었고, 일부 혈장 대사물질의 생후 월령별 변화와 수익 구조의 미세한 차이만을 유발하는 것으로 판단된다. 그러나 배합사료의 영양 수준 상향은 도체의 근내지방도에 선택적으로 영향을 미쳐 고급육 출현율 향상에 기여할 수 있는 것으로 판단된다.

따라서 본 연구의 결과에서 사료 섭취량은 육질형 그룹에 비해 육량형 그룹에서 높았지만, 체중, 일당증체량 및 사료요구율의 지속적 우위로 연결되지는 않았던 것으로 판단된다. 혈장 대사물질과 호르몬 농도의 변화는 일부 생후 월령에서만 국소적으로 나타나 동일 사양 조건에서 생리적 항상성이 주로 유지되었음을 시사한다. 유전 능력 그룹 간 도체 형질은 대체로 유사했고, 근내지방도는 육량형 그룹에 비해 육질형 그룹에서 높아 고급육 출현율 증가에 긍정적인 영향을 미친 것으로 판단된다. 결과적으로 동일한 사양 조건에서는 유전 능력의 차이가 성장 혹은 도체의 육량 관련 형질보다는 체 조성 분배와 도체의 육질 관련 형질에 부분적으로 작용하는 것으로 해석된다.

모든 생후 월령별 체중에 대한 영양 수준, 유전 능력 혹은 상호작용(영양 수준×유전 능력)의 통계적으로 유의미한 영향은 없었다. 비육전기(생후 13–18개월령) 일당증체량은 육질형 그룹에 비해 육량형 그룹에서 높았고(p < 0.05), 비육후기(생후 19–24개월령) 일당증체량은 대조구에 비해 처리구에서 높았다(p < 0.05). 육성기, 비육전기 및 전 기간 배합사료 섭취량은 육질형 그룹에 비해 육량형 그룹에서 높았지만(p < 0.01), 비육후기 배합사료 섭취량은 유전 능력 그룹 간 통계적으로 유의미한 차이는 없었다. 비육후기 조사료 섭취량은 대조구에 비해 처리구에서 낮았고(p < 0.05), 조사료 섭취량은 육성기, 비육전기 및 비육후기에서 상호작용이 확인되었지만(p < 0.05), 전 기간에서는 영양 수준과 유전 능력의 통계적으로 유의미한 영향은 없었다. 육성기 건물 섭취량은 영양 수준, 유전 능력 및 상호작용이 확인되었고(p < 0.01), 비육전기에서는 육질형 그룹에 비해 육량형 그룹에서 높았으며(p < 0.01) 상호작용도 확인되었지만, 영양 수준의 통계적으로 유의미한 영향은 없었다. 비육후기 건물 섭취량은 상호작용이 확인되었지만(p < 0.01), 영양 수준 및 유전 능력의 통계적으로 유의미한 영향은 없었다. 전 기간 건물 섭취량은 대조구에 비해 처리구에서 낮았고(p < 0.01), 육질형 그룹에 비해 육량형 그룹에서 높았지만(p < 0.01), 상호작용의 통계적으로 유의미한 영향은 없었다.

따라서 본 연구의 결과에서 영양 수준과 유전 능력의 차이는 동일한 사양 조건에서 성장 전반에 제한적으로 작용하였으며, 일당증체량의 국소적인 차이와 사료 섭취량의 일부 변화에서만 영향을 미친 것으로 판단된다. 또한 배합사료 및 건물 섭취량은 육질형 그룹에 비해 육량형 그룹에서 높았고, 대조구에 비해 처리구에서 낮게 나타났지만, 이러한 차이가 장기적인 성장 우위로 이어지지는 않았다. 혈장 대사물질은 생후 월령별로 일부 항목에서만 영양 수준 혹은 유전 능력 그룹 간 차이가 확인되었고, 전반적인 대사 패턴은 유사한 양상을 보였다. 근내지방도는 육질형 그룹과 영양 강화 그룹에서 높게 나타나는 경향을 보여 고급육 출현율 향상에 긍정적인 영향을 미친 것으로 판단된다.
따라서 거세한우 단기 비육(24개월 사육) 시스템은 본 연구에서 확인된 바와 같이 영양 수준 조정이 성장 및 육량 형질에 미치는 영향이 제한적일 수 있음을 전제로 성장단계별 급여 전략을 보다 정밀하게 검토할 필요가 있을 것으로 판단된다. 비육후기에는 영양 수준 상향이 일당증체량의 국소적 차이와 근내지방도 및 육질 1+등급 이상 출현율과 연계된 경향으로 관찰된 점을 고려하여 육질 관련 특성을 목표로 급여 체계를 보완할 필요가 있을 것으로 보인다. 또한 유전 능력에 따른 사료 섭취량과 근내지방도 및 육질 1+등급 이상 출현율의 차이가 확인된 점을 고려하면, 동일 사양 조건에서도 유전 능력 맞춤형 급여 관리가 필요한 것으로 해석될 수 있다. 이러한 운용 체계는 24개월 전후 단기 비육 시스템에서 성장의 안정성을 유지하면서 육질 관련 특성을 보완하는 데 기여할 수 있지만, 수익성 개선을 위해서는 영양 수준 조정만으로는 한계가 있을 것으로 판단된다.

In this study, we investigated the effects of dietary nutrition levels and genetic potential on the growth, carcass traits, and profitability of Hanwoo steers (24-month-old) Hanwoo steers managed under a short-term fattening system. A total of 157 Hanwoo calves (7 months of age) were utilized. Following an assessment of castration status and genetic potential, and after an adaptation period to the diet and environment, a feeding experiment was conducted from 8 to 24 months of age.
<Study Ⅰ> Effects of dietary nutrition levels on growth, carcass traits, and profitability of short-term fattening Hanwoo steers
This study investigated the effects of dietary nutrition levels on the growth, carcass traits, and profitability of Hanwoo steers raised for a short period (24 months). A total of 157 Hanwoo calves, of 7 months of age, were utilized. Following castration and an adaptation period to the diet and environment, a feeding trial was performed from 8 to 24 months of age.
Increasing the dietary nutrition levels of the concentrate had no statistically significant effect on body weight across age points. Similarly, no significant differences in average daily gain (ADG) were observed between the nutrition level groups during the growing period (8–12 months), the early fattening period (13–18 months), or the overall experimental duration (8–24 months). However, during the late fattening period (19–24 months), the treatment group exhibited a higher ADG compared to the control group (p < 0.05). No significant differences were observed between the nutrition level groups in the intake of concentrate and forage, nor were there significant differences in dry matter intake (DMI) or feed conversion ratio (FCR).
Plasma glucose concentrations at 18 and 24 months of age were lower in the treatment group compared to the control group (p < 0.05); conversely, plasma non-esterified fatty acid (NEFA) concentrations at 12 and 18 months of age were higher in the treatment group (p < 0.01). Regarding protein and mineral metabolism, several markers were significantly lower in the treatment group at specific time points, including plasma blood urea nitrogen (BUN) at 12 months, creatinine at 24 months, phosphorus at 18 months, aspartate aminotransferase (AST) at 24 months, and γ-glutamyl transferase (GGT) at 18 months (p < 0.05). No statistically significant differences were observed between the nutrition level groups for plasma total protein and albumin concentrations across all months of ages. Similarly, plasma cholesterol, calcium, and magnesium concentrations exhibited no significant differences between the groups at most time points.
No significant differences in plasma insulin, growth hormone, or leptin concentrations between the nutrition level groups across all age points. Although plasma growth hormone concentrations at 8 months of age tended to be higher in the treatment group compared to the control group, these differences were not statistically significant.
Dietary nutrition levels exerted no significant effect on carcass weight, longissimus muscle area(rib-eye area), backfat thickness, yield index, or the appearance rate of yield grades. Although the marbling score tended to be higher in the treatment group than in the control group, this difference was not statistically significant. No significant effects of nutrition levels were observed on meat color, fat color, or texture; however, the maturity score was higher in the treatment group than in the control group (p < 0.05). Additionally, the appearance rate of meat quality grade 1+ or higher was greater in the treatment group compared to the control group.
In the profitability analysis, gross income did not differ significantly across any of the evaluated scenarios, including specialized fattening, specialized cow-calf and finishing. Feed costs tended to be slightly higher in the treatment group; however, this difference was not statistically significant. Ultimately, regardless of the nutrition level, all groups showed a profit deficit; however, the differences in the magnitude of these losses were not statistically significant.
In conclusion, these results suggest that increasing the dietary nutrition levels of concentrate has limited effects on the growth and yield traits of Hanwoo steers managed under a short-term (24 month) fattening system. Observed effects were restricted to minor age-related variations in specific plasma metabolites and subtle differences in the profit structure. Nevertheless, the upward adjustment of nutrition levels was found to selectively enhance the marbling scores, demonstrating its potential to contribute to improve the appearance rate of high-quality meat.
<Study II> Effects of genetic background on growth, carcass traits, and profitability of short-term fattened Hanwoo steers
This study investigated the effects of genetic capacity on the growth, carcass traits, and profitability of short-term fattened Hanwoo steers (reared for 24 months). A total of 157 Hanwoo calves, of 7 months of age, were selected. Following castration and an adaptation period to dietary and environmental conditions, a feeding experiment conducted from 8 months to 24 months of age.
Body weight (BW) at monthly intervals tended to be higher in the meat-quantity group (high-yeild group) than in the meat-quality group (high-quality); however, no statistically significant differences were observed. During the early fattening period, the average daily gain (ADG) was higher in the meat-quantity group compared to the meat-quality group (p < 0.05). No significant differences were observed between the genetic capacity groups during the growing period, the late-fattening period, or acrosss the overall experimental period. However, concentrate feed consumption during the growing, early-fattening, and the overall periods was higher in the meat-quantity group compared to the meat-quality group (p < 0.01). Notably, this difference in concentrate intake was no longer observed during the late -fattening period. Genetic capacity did not influence roughage intake. Consequently dry matter intake (DMI) during the growing period, early fattening period, and the overall period was higher in the meat-quantity group (p < 0.01), whereas no statistically significant difference in DMI was observed during the late-fattening period.
No statistically significant differences in plasma glucose, non-esterified fatty acid (NEFA), or cholesterol concentrations were observed between the genetic-merit groups across age points. However, at 12 months of age, plasma NEFA concentrations tended to be lower in the meat-quantity group compared to the meat-quality group, though this did not reach statistical significance. In contrast, at 24 months of age, the plasma triglyceride concentration was higher in the meat-quantity group than in the meat-quality group (p < 0.01). Additionally, at specific time points, the meat-quantity group exhibited significantly higher concentrations of total plasma protein and calcium concentrations(at 24 months), and magnesium (at 18 months) compared to the meat-quality group (p < 0.05).
Although no statistically significant differences in plasma insulin and leptin concentrations were observed between the genetic-merit groups, the plasma growth hormone concentration at 12 months of age was higher in the high-yield group compared to the high-quality group (p < 0.05).
No statistically significant differences were observed between the genetic-merit groups regarding carcass weight, loin-eye-area, back-fat thickness, yield index, or the appearance rate of yield grades. The marbling score was higher in the high-quality group compared to the high-yield group (p < 0.05). Conversely, no significant differences were found in meat color, fat color, or texture between the groups. Additionally, the high quality group demonstrated a superior appearance rate of meat quality grade 1+ or higher (premium grade) compared to the high-yield group.
In conclusion, although feed intake was higher in the high-yield group compared to the high-quality group, this did not translate into a consistent advantage in BW, ADG, or feed conversion ratio (FCR). Changes in plasma metabolites and hormone concentrations were observed only at specific points, suggesting that physiological homeostasis was largely maintained under identical feeding conditions. Carcass traits were generally similar between the genetic-merit groups. Marbling score was higher in the high-quality group, directly contributing to a higher incidence of premium-quality grades. Consequently, these results suggest that, under identical management conditions, differences in genetic merit primarily affect body composition and carcass quality traits rather than growth- or yield-related traits.
<Study III> Effects of genetic background and dietary nutrient density on growth performance, carcass traits, and profitability of short-term fattening Hanwoo steers
This study investigated the effects of dietary nutrient levels and genetic merit on the growth, carcass traits, and profitability of short-term fattened Hanwoo steers (24 month finishing period). A total of 157 Hanwoo calves, aged 7 months, were utilized in the study; their castration status and genetic merit were analyzed. Following a period of adaptation to the diet and environment, a feeding experiment was conducted from 8 to 24 months of age.
No statistically significant effects of nutrient levels, genetic merit, or their interaction (nutrient level × genetic merit) were observed for body weight at any age. During the early-fattening period (13–18 months of age), the average daily gain (ADG) was higher in the high-yield group compared to the high-quality group (p < 0.05); conversely, during the late- fattening period (19–24 months of age), ADG was higher in the treatment group than in the control group (p < 0.05). Concentrate intake during the growing, early-fattening, and overall periods was higher in the high-yield group compared to the high-quality group (p < 0.01), though no significant differences were observed between genetic-merit groups during the late-fattening period. Roughage intake during the late-fattening period was lower in the treatment group compared to the control group (p < 0.05). Although interactions were observed for roughage intake during the growing, early, and late-fattening periods (p < 0.05), no significant effects for nutrient level or genetic merit were observed over the entire experimental period. Regarding dry matter intake (DMI), significant effects of nutrient level, genetic merit, and their interactions were confirmed during the growing period (p < 0.01). In the early-fattening period, DMI was significantly higher in the high-yield group (p < 0.01) athough nutrient level had no significant effect. In the late-fattening period, an interaction was observed for DMI (p < 0.01), though the main effects of nutrient level and genetic merit were not significant. Over the entire period, DMI was lower in the treatment group (p < 0.01) and higher in the high-yield group (p < 0.01), with no significant interaction effect.
At 24 months of age, the plasma triglyceride concentration was higher in the high-yield group compared to the high-quality group (p < 0.01). At 18 months of age, plasma phosphorus and γ-glutamyl transferase concentrations were lower in the treatment group compared to the control group (p < 0.01). Similarly, at 24 months of age, plasma aspartate aminotransferase concentration was lower in the treatment group than in the control group (p < 0.01). Although plasma calcium at 24 months and plasma magnesium at 18 months were higher in the high-yield group compared to the high-quality group (p < 0.05), no statistically significant interaction effects (nutrient level × genetic merit) were observed for plasma mineral or liver function-related metabolite concentrations.
No statistically significant effects of nutrient level, genetic merit, or their interaction were observed for plasma insulin concentrations at any age. However, at 12 months of age, the plasma growth hormone concentration was higher in the high-yield group compared to the high-quality group (p < 0.05).
No statistically significant effects of nutrient level, genetic merit, or their interaction were observed for carcass weight, back-fat thickness, or yield index. The loin-eye-area tended to be larger in the nutrient-enriched group compared to the conventional nutrient group, although this difference was not statistically significant. The marbling score was significantly higher in the high-quality group compared to the high-yield group (p < 0.05); similarly, it showed an increasing trend in the nutrient-enriched group compared to the conventional group, though without statistical significance. No significant effects of nutrient level, genetic merit, or their interaction were found for meat color, fat color, texture, or maturity. Finally, the appearance rate of premium-grade meat (quality grade 1+ or higher) was greater in the nutrient-enriched and high-quality groups compared to the conventional and high-yield groups.
The results of the present study indicate that variations in nutrient level and genetic merit exert limited influence on overall growth under identical management conditions, influencing only specific fluctuations in ADG and localized changes in feed intake. Furthermore, although concentrate and DMI were higher in the high-yield group compared to the high-quality group and lower in the treatment group than in the control group, these differences did not translate into a long-term growth advantage.
Regarding plasma metabolites, differences between nutrient levels or genetic merit groups were confirmed only for specific parameters at distinct ages, whereas overall metabolic patterns remained similar. Finally, the marbling score was higher in the high-quality and nutrient-enriched groups, this trend was identified as a primary factor contributing to the increased appearance rate of premium-quality meat.
Therefore, a short-term fattening system (24 months) for Hanwoo steers should be based on the premise that adjusting nutrient levels may have limited effects on overall growth and carcass yield traits, as confirmed in this study. This suggests the need for a more precise evaluation of feeding strategies tailored to each growth stage. Specifically, considering that increased nutrient levels during the late-fattening period tended to be linked to localized differences in ADG and higher appearance rate of quality grade 1+ or higher, feeding systems should be refined to target meat-quality-related characteristics.
Furthermore, given the differences in feed intake, marbling score, and premium quality grade appearance rates according to genetic merit, these findings can indicate that tailored nutritional management based on genetic potential is necessary, even under identical management conditions. Although such an operational framework can enhance quality traits while maintaining growth stability in a 24-month short-term fattening system, adjusting the nutrient levels alone may be insufficient to significantly improve overall profitability.
