본 연구는 감각 기반 서비스디자인이 로컬브랜드 경험을 어떻게 구성하고 강화하는지를 탐색하기 위해 수행되었다. 최근 팝업스토어는 소비와 체험이 결합된 주요 접점으로 확산되고 있으나, 일부 사례에서는 과도하거나 무분별한 체험 요소와 전시 중심의 연출로 인해 관람객의 감각 피로를 유발하고, 결과적으로 브랜드 강화 효과를 저해하는 문제도 나타나고 있다. 이에 감각 자극이 사용자 경험 과정에서 지역성 인식 및 브랜드 관계 형성과 어떻게 연결되는지에 대해서는 실제 현장 구현 사례를 중심으로 한 해석적 검토가 필요하다. 본 연구는 이러한 문제의식에 기반하여 강원특별자치도 양양군의 로컬브랜드 ‘힐러스(Hillers)’를 사례로 선정하고, 대표 디저트인 ‘양양송이푸딩’을 중심으로 기획·운영된 F&B 팝업스토어 프로젝트를 연구 대상으로 삼아 경험 구조를 분석하였다. 연구는 서비스디자인 방법론을 적용하여 대표 페르소나 설정, 사용자 여정맵 구성, 감각 터치포인트 도출을 기반으로 공간 구성, 동선 계획, 체험 요소를 단계적으로 설계하였다. 시각·청각·후각·미각·촉각을 포괄하는 다감각적 경험이 사용자 여정의 흐름에 따라 축적되도록 쇼케이스 및 정보 요소를 구성하였으며, 구현 결과는 단계별 사진 자료와 코멘트를 중심으로 기록하고 해석하였다. 해석의 타당성을 보완하기 위해 서비스디자인, 로컬브랜드, 홍보 및 팝업스토어 분야의 전문가 인터뷰를 병행하였다. 또한 방문자 설문조사를 통해 감각 경험, 지역성 인식, 브랜드 애착, 행동의도에 대한 응답을 수집하고, 감각 기반 서비스디자인을 통한 로컬브랜드 경험 연구: F&B 팝업스토어를 중심으로 기술통계 및 상관관계 분석을 통해 경험 요소 전반의 경향성과 그 상호 관련 양상을 보조적으로 검토하였다. 분석 결과, 설문 응답은 전반적으로 긍정적 평가가 우세하게 나타났으며, 감각 경험, 지역성 인식, 브랜드 애착, 행동의도 간에는 상호 정(+)적 동반 경향이 확인되었다. 이는 팝업스토어에서 설계된 다감각적 자극이 지역적 맥락에 대한 해석과 결합될 때, 브랜드에 대한 정서적 태도 형성과 향후 행동 의향이 함께 나타날 수 있음을 사례 차원에서 시사한다. 다만 본 연구는 단일 사례를 기반으로 한 탐색적 연구로서 연구 결과의 일반화에는 한계가 있으며, 정량 분석 역시 인과관계를 검증하기보다는 해석을 보완하기 위한 보조적 근거로 활용되었다. 종합하면, 본 연구는 로컬 F&B 팝업스토어를 감각 기반 서비스디자인의 실험적 구현 장으로 제시하고, 작품 및 기록 중심의 해석에 설문 기반 정량 분석 결과를 결합함으로써 감각 경험이 지역성 인식과 브랜드 관계 형성과정에서 어떻게 맞물려 나타나는지를 경험 구조 차원에서 탐색적으로 제안하였다.

This study was conducted to explore how sensory-based service design shapes and reinforces local brand experience. As local brands and F&B pop-up stores have increasingly become major touchpoints for consumer experience, there remains a need for interpretive, practice-based examination of how sensory stimuli connect to users’ perceptions of local identity and their relationship with a brand. Accordingly, this study
selected the local brand “Hillers” in Yangyang, Gangwon Special Self-Governing Province, Republic of Korea, and analyzed the experience structure of a project in which an F&B pop-up store was designed and operated around the brand’s signature dessert, “Yangyang Pine Mushroom Pudding.” Drawing on a service design approach, the study developed a representative persona, constructed a user journey map, and organized sensory touchpoints to design the space, circulation, and experiential elements in sequential stages. Showcases and informational
components were planned so that multisensory cues—visual, auditory, olfactory, gustatory, and tactile—could accumulate naturally along the journey. The implemented outcomes were documented and interpreted using stage-by-stage photographs, installation details, and design-intent notes as primary materials. To strengthen the credibility of interpretation, expert interviews were conducted with professionals in service design, local branding, and promotion/pop-up practice. In addition, a visitor survey was administered to collect responses regarding sensory experience, perception of local identity, brand attachment, and behavioral intention. Descriptive statistics and correlation analysis were used to examine overall tendencies and co-occurring patterns among these experience elements as supplementary evidence. The results indicate that survey responses were predominantly positive overall, and that sensory experience, perception of local identity, brand attachment, and behavioral intention showed positive co-occurring tendencies. At the case level, this suggests that multisensory stimuli designed in the pop-up context may be perceived in tandem with the interpretation of local context, as well as with affective attitudes toward the brand and
intentions for subsequent actions. However, as an exploratory study based on a single case, the findings have limited generalizability, and the quantitative analysis was used not to establish causality but to support the interpretive discussion. In conclusion, this study presents a local F&B pop-up store as an experimental field for implementing sensory-based service design, and proposes—exploratorily—an experience
structure in which sensory experience aligns with the perception of local identity and the formation of brand relationships by combining artifact- and documentation-based interpretation with survey-based quantitative findings.
