본 연구는 양산 지역 4개교(초·중·고) 급식실을 대상으로 Flowmap 기법과 설문조사를 활용하여 주방 동선의 구조적 문제를 진단하고 개선안을 제시하였다. 분석 결과, 대부분의 학교에서 조리·배식·세척 동선의 중첩과 불필요한 우회 동선이 확인되었으며, 이는 작업 피로도와 안전사고 위험을 높이는 요인으로 나타났다. 이를 해결하기 위해 청결·오염 구역의 완벽 분리와 일방향 직선 흐름(Single Flow)을 핵심으로 하는 개선 모델을 제안하였으며, 시뮬레이션 결과 평균 이동 거리 33.9% 감소, 동선 중첩 66.7% 감소의 효과를 확인하였다.

This study aims to propose a workflow optimization plan to enhance the
efficiency and safety of school kitchen environments, focusing on the specific
challenges observed in four diverse schools (Yangsan Seongsan Elementary,
Mulgeum Dong-A Middle, Mulgeum High, and Yangsan High) in the Yangsan area.
The research analyzes the problems of existing kitchen workflows through
on-site observations, surveys with kitchen staff, and visual analysis using the
Flowmap program.
The analysis of the "Before" state consistently revealed critical issues across
all four schools, despite their varying structures (e.g., large vs. narrow spaces):
severe hygiene path overlap (especially between cooking and waste/dish return
paths), non-linear workflow causing frequent backtracking and excessive travel
distance (with an average major task path distance of 37.4m), and inefficient
spatial utilization that exacerbated congestion and fatigue.
Based on this, an improved "After" workflow model is proposed, centered on
the principles of complete physical separation of clean/dirty zones and the
implementation of a single, straight-line flow from preparation to serving. For
structurally constrained, narrow spaces like Mulgeum High, a specialized Parallel
Layout Model is recommended, while for large, inefficient spaces like Yangsan
High, functional zone demarcation and external waste channeling are key.
To verify the effectiveness, a comparative analysis of the "Before and After"
workflows was conducted through simulations for all four case studies. The
results predict an average significant reduction in total movement distance (by
33.9%) and the number of workflow intersection points (by 66.7%), drastically
improving both productivity and safety. A follow-up survey on the proposed plan
indicated high expectations among kitchen staff for reduced fatigue and improved
work efficiency (satisfaction scores increased from 3.1 to 4.2).
This study provides practical, data-driven guidelines for designing safer and
more efficient kitchen environments, specifically tailored to the diverse structural
conditions found in the Yangsan school system, contributing fundamentally to
staff welfare and food hygiene.
