Cacao beans are one of the richest naturally occurring sources of antioxidants with high amount of phenolic phytochemicals. In case of cacao bean processing, roasting is one of the most important processes, which influences the taste and flavor of the cacao bean by changing them both physically and chemically. The heat and pressure during puffing also cause the change of chemical composition of puffed materials. Puffing could be an alternative to roasting, which increases the yield and provides rich taste and high antioxidative capacity. The aim of this study is to determine the effect of puffing on the bioactive components such as theobromine, catechin, epicatechin and procyanidn B2 as well as antioxidant capacity of cacao beans. Roasting was carried out at 190oC for 15min and puffing was performed at 4-7kgf/cm2. After both roasting and puffing, the color of puffed cacao beans were darker than roasted cacao beans and getting darker as increasing puffing pressure. In addition, puffed cacao beans showed a volume increase and easily separated from the seed coat. Moisture contents of puffed cacao beans were higher than roasted cacao beans. Crude protein, crudes fat and ash contents were similar in both puffed and roasted cacao beans. Puffed cacao beans at 4 kgf/cm2 showed the highest total polyphenol contents (TP) (23.16mg GAE/g sample) and total flavonoid contents (TF) (10.65mg CE/g sample). As increasing the puffing pressure, TP and TF were decreased. Puffed cacao beans at 5 kgf/cm2 revealed similar TP (19.4mg GAE/g sample) compared to the roasted cacao beans (19.14mg GAE/g sample). However, TF (8.94mg CE/g sample) of puffed cacao beans at 5 kgf/cm2 was higher than roasted beans (7.51mg CE/g sample). Defatted cacao beans showed higher TP and TF than non defatted cacao beans. Antioxidant capacities of cacao beans were determined using the FRAP, DPPH and ABTS methods and all methods showed a similar pattern with the result of the TP and TF. TF showed higher correlation to antioxidant capacity than TP. Theobromine, catechin, epicatechin and procyanidin B2 contents were determined by HPLC. Catechin contents were increased after roasting and puffing. On the contrary, epicatechin contents were decreased after roasting and puffing. Puffed cacao beans at 4kgf/cm2 showed the highest catechin contents (8.45mg/g sample) and epicatechin contents (2.54mg/g sample). Despite the procyanidin B2 contents were decreased after puffing and roasting process, their contents of puffed cacao beans were higher than that of roasted cacao beans. Epicatechin revealed the highest correlation with antioxidant capacity of cacao beans among the flavonoid compounds (r2 = 0.491 - 0.721). Puffed cacao beans received good sensory score in flavor but sourness increased as puffing pressure increased. These results provide the potential and possibility of puffing instead of roasting in cacao bean processing.
