조리사 지망 대학생들의 청소년 후기 진로발달 경험 = Career Development Experiences of College Students in Late Adolescence Aspiring to Become Chefs

국문 초록 (Abstract)

조리사가 되고 싶은 대학생들은 청소년 후기에 어떠한 양상으로 진로발달을 하는가? 이 연구는 문화예술의 가치환기와 역할 제고의 필요성이 급부상한 가운데, 그 대표적인 직업 유형으로서 조리사를 장래희망으로 설정한 대학생들의인간적 경험에 주목하였다. 내러티브 탐구를 위한 연구퍼즐을 맞추고자 남녀 대학생 총 4인을 연구참여자로 선정하였고, 개인당 네 번씩 만나 현장 텍스트를 확보했다. 연구 텍스트 분석을 위해서는 Clandinin과 Connelly(2000)의 내러티브3차원적 탐구공간을 필두로 당사자들의 인식과 경험에 접근하였다. 이에 바탕을 두어 우선 조리사를 지망하는 네명의 진로발달에 관한 주관적 특징과 상황적 맥락을 밝혀냈다. 그리고 지속적인 유목화 및 비교 분석 작업을 거쳐연구참여자들의 경험을 관통한 6개 대주제를 발견하였다. 이는 ‘부담스러운 초기 비용에도 풋풋한 도전 쌓아 닿는조리사의 꿈’, ‘자존심 내려놓고 누구에게든 배워 풍성해지는 레시피’, ‘조리하는 또래들 사이에서 경쟁과 소통으로쌓는 실력’, ‘젊은 날의 실패 수용해 조리사로 성공할 미래’, ‘전문 조리사 되어갈수록 절감하는 요리의 가치’, ‘과거와달라진 조리사 위상에 기꺼이 다지는 진로역량’으로 드러났다. 끝으로, 조리사 지망 대학생들의 청소년 후기 진로발달지원과 전문 조리 역량 함양, 경력계발과 직업준비 촉진 등을 위한 논의점을 제공하였다.

How do college students in late adolescence aspire to become chefs and develop their careers? This study sheds light on the human experiences of college students who have set their sights aspires to become chefs, a representative occupation that has gained renewed attention amid the growing recognition of the value and role of cultural arts.
To address this research puzzle through our narrative inquiry, four university students (both male and female) were selected as research participants. Each participant took part in four in-depth interviews to generate rich field narratives. For the analysis, Clandinin and Connelly’s (2000) three-dimensional narrative inquiry space was employed to examine participants’ perceptions and lived experiences. Based on this approach, this study first revealed the subjective characteristics and situational contexts of these four aspiring chefs’ career development. Through ongoing coding and comparative analysis, six overarching themes the participants’ experiences were identified: ‘The dream of becoming a chef achieved through fresh challenges despite burdensome initial costs,’ ‘Recipes enriched by humbling oneself to learn from anyone,’ ‘Skills built through competition and communication among peers in the culinary field,’ ‘Future success as a chef shaped by embracing youthful failures,’ ‘The value of cooking increasingly recognized as they grow into professional chefs,’ and ‘Career competencies strengthened in line with the elevated status of chefs compared to the past.’ Finally, this study provides key discussion points to support the career development of college students aspiring to become chefs in late adolescence, as well as to foster professional culinary skills, career advancement, and job readiness.
