This study evaluated the antioxidant and anti-inflammatory activities of hot water (APW) and 70% ethanol (APE) extracts of the Actinidia polygama stem. While the fruits and leaves of Actinidia polygama have been previously confirmed for various active compounds and biological activities, there is a lack of research on the physiological activity of its stem. Experimental results demonstrated that both electron-donating ability and 2,2'-azino-bis (3-ethylbenzothiazoline-6-sulfonic acid) radical scavenging activity increased in a concentration-dependent manner. Both extracts showed a cell viability of more than 95% at all concentrations (5, 10, 50, 100, 500, and 1,000 μg/mL). Compared with the lipopolysaccharide-only treatment group at a concentration of 1,000 μg/mL, APW inhibited nitric oxide (NO) production by 27.12%, and APE showed an inhibition rate of 30.98%. Under identical experimental conditions at a concentration of 1,000 μg/mL, the protein expression levels of inducible NO synthase and cyclooxygenase-2 were inhibited by 22.95% and 29.05% with APW treatment, respectively, and by 7.61% and 1.98% with APE treatment, respectively. This study confirmed the antioxidant and anti-inflammatory effects of hot water and 70% ethanol extracts of Actinidia polygama stem, thus proving its potential as a functional natural material.
