    This study analyzed the contamination of food contact surfaces in military cafeterias using the adenosine triphosphate (ATP) bioluminescence assay to suggest efficient hygiene management. Sixteen food contact surfaces in three military cafeterias in Gangneung were measured for ATP contamination twice from December 9th, 2024 to January 25th, 2025. The average value calculated after five repeated measurements for each test item was used for statistical processing. A paired t-test was performed on the average contamination levels of the three military cafeterias before and after hygiene education, and only the refrigerator handle showed a significant reduction (p<0.05). The remaining 15 test items showed a trend of decreasing contamination after the education, but the difference was not significant. The trays and pans showed low contamination levels of before and after the education and were considered to be suitable. The nine test items judged to be unsuitable before and after the education were as follows: vegetable knives and processed food knives, ladles, rice paddles, tongs, aprons, refrigerator handles, and the left and right hands of the cooking staff. The refrigerator handle and apron showed the highest contamination levels because they were not included in the hygiene inspection of military cafeterias. The dishcloth was unsuitable before the education but was suitable after the education because it was replaced with a new one. The trays and pans in the military cafeteria were well managed, and the dishcloth should be replaced at least monthly.
